Brown Rice Risotto with Sugar Snap Peas made in an Instant Pot

Super easy and super delicious!


1 teaspoon extra virgin olive oil

1 medium yellow onion, diced

1 cup Crimini mushrooms, diced

1 ½ cups sugar snap peas, cut larger ones in half

½ cup frozen green peas

1 ½ cups short grain brown rice

½ cup dry red or white wine

3 ½ cups vegetable broth, preferably homemade

½ teaspoon sea salt ½ teaspoon black pepper

¾ cup cheese, grated, cheddar or Parmesan, vegan if desired
