Instant Pot Red Lentil and Mushroom Pasta Sauce

This is one of our favorite recipes.

We like to use it with:

  • Pasta
  • Rice
  • CousCous
  • as a base for a casserole

Ingredients

1 large yellow onion, diced

2 stalks celery, diced

3 medium carrots, diced

12 ounces crimini mushrooms, quartered

4 cloves garlic, diced

1 ½ cups red lentils, rinsed

28 ounces crushed tomatoes, can

28 ounces diced tomatoes, can

4 cups vegetable broth

3 tablespoons tomato paste

1½ teaspoons sea salt

2 teaspoons thyme

2 teaspoons oregano

1 teaspoon basil

¼ teaspoon red pepper flakes
